Herbs De Provence, or provencal herbs, are a seasoning blend that originated in France . A lovely vegetarian dish can be prepared with roasted vegetables such as eggplant, mushrooms, onions, even squash that are lightly coated with olive oil and seasoned with the provencal herbs before being placed in the oven. Add them to a rich marinara sauce and serve over pasta. Use with all types of meats and fishes.
